4.1 Application in ordinary food
Fructooligosaccharides have low calorific value, good thermal stability, and have properties such as inhibiting starch aging. Therefore, they can partially replace sucrose and be added to baked foods such as cookies, bread, and mooncakes. Baked foods with added oligofructose have a pure sweet taste, good shape and color, and have the effect of promoting the proliferation of beneficial bacteria, which is both nutritious and healthy.
In addition, oligofructose also has excellent solubility and shaping properties, which can be used in the production of candies such as chewing gum and peanut gummies.
4.2 Application in health products and special medical foods
