Factors affecting the development of food and beverage industry in 2023

According to the International Food Information Council (IFIC), health drinks, probiotics, and phyto-based products will all impact the food and beverage industry in 2023. In addition, IFIC points to other major issues, including the impact of global supply chains.

According to the IFIC survey, consumers in 2023 will be looking for energy, mental health, and gut health benefits in beverages, with other caffeine options emerging, such as Holly tea Substitute, a low-caffeine alternative that Amazon's Whole Foods Market believes is an ingredient to watch this year. The number of mocktail and non-alcoholic options will also continue to grow.

Probiotics will expand beyond the yogurt section to appear in chocolate, ice cream, juice and nutrition bars. Beverages are another delivery system for probiotics and prebiotics. Over the past few years, several ingredient suppliers have been responding to consumer interest in probiotics.

According to IFIC, innovations in pasta, rice, and snacks are also expected to trend this year. Many of the products will be upcycled, meaning that some plant-based ingredients that would normally go to waste will be processed for other products.

In 2023, natural and clean foods will be at the forefront. The U.S. Food and Drug Administration may also rule on an updated definition of "healthy" foods. IFIC's 2022 Food and Health Survey found that 37% of respondents define healthy food as fresh, followed by low sugar (32%) and high-quality protein (29%).

Diversity, equity and inclusion should have a greater impact on the industry. According to the 2022 IFIC survey, 45 percent of respondents say that treating workers fairly and fairly is important in their purchasing decisions. The 2020-2025 Dietary Guidelines emphasize the importance of diversity and cultural traditions in reaching a larger portion of the U.S. population.

"Glocalization" refers to the interplay between globalization that respects and ADAPTS to local needs and conditions. American consumers have become more knowledgeable about global supply chains and how factors such as pandemics and wars affect them. In the 2022 Food and Health Survey, 83% of respondents said they had noticed an increase in the cost of food and beverages over the past year.
