Materials and Methods

1. Raw materials: corn starch, konjac flour, anthocyanins, vitamin A, mint flavoring, fruit powder β- Cyclodextrin, maltodextrin, arabic gum, and isomaltooligosaccharides.
2. Main instruments and equipment: pulverizer, 100 mesh screen, magnetic mixer, colloid mill, homogenizer, granulator, tablet press and spray dryer.
3. Process flow: ① Crushing of main and auxiliary materials → Screening → Mixing ← Microcapsule treatment (adding anthocyanins and VA) ← β- Dextrin, maltodextrin; ② Mix (add wetting agent) → wet pellets → dry → whole pellets (add lubricant) → total mixing → tablet pressing → sterilization → packaging → finished product.
4. Operation points: When drying, the drying temperature should be between 50-60 ℃, and the particles should be flipped halfway until they are evenly dried; When pressing the tablet, ensure that the weight of the tablet is around 100mg, the hardness is appropriate, and the disintegration meets the requirements;
Dissolve a certain amount of maltodextrin in distilled water during embedding, and quantify the amount of maltodextrin β- Add cyclodextrin and quantitative gum arabic solution, slowly add anthocyanin, stir evenly, and dry with spray to form microcapsule particles.

Results and Analysis

Research on the Formula Ratio and Production Technology of Tablet Candy (1) The optimal dosage of fruit powder, oligomaltooligosaccharides, konjac flour, and corn starch slurry as binders for tablet candies is 15%, 30% to 40%, 10%, and 10% to 12%, respectively.
When the proportion of each component in the filling agent is at the optimal level, the addition of 3.5% water can give the pressed candy a delicious taste and excellent tissue state.
(2) On the basis of the optimal formula, the optimal process parameter combination for granulation particle size, sugar production pressure, and lubricant usage is 100 mesh, 20 kN, and 0.5% lubricant (magnesium stearate) usage;
The optimal process conditions for microencapsulation are feed temperature of 60 ℃, centrifugal atomizer speed of 15000 rpm, inlet air temperature of 190 ℃, and homogenization pressure of 40MPa;
The optimal process conditions are 40% solid content, 0.2% emulsifier addition, and 75% arabic gum content.
(3) The addition of additives and nutritional enhancers. The maximum national standard usage of additives such as carrageenan and oligomeric isomaltol is 5.0g/kg. Use in moderation as needed, add 4.5g/kg to each product.
National standard maximum usage of nutritional fortifier one vitamin 2330-4000 μ G/kg, add 3500 to this product μ G/kg.
(4) Packaging form. The external packaging is made of PP, Ps and other plastic sheets with low toxicity, which are hot formed into rectangular boxes for easy portability. The interior is made of moisture-proof and corrosion-resistant PVC soft packaging bags.

The research results indicate that

Taking a small amount of functional factors to alleviate visual fatigue can achieve the effect of relieving visual fatigue and improving vision.
This pressed candy process comprehensively considers the function of relieving visual fatigue, as well as the taste, flavor, and carrying and preservation aspects. At the same time, it uses sugar alcohols with health functions as sweeteners, which is in line with the international trend of food development towards low sugar, low calorie, and health foods. It is particularly suitable for young and middle-aged people with high work and study pressure in modern society, and has broad market prospects.
